That means that I strive to make most of my diet come from plants, with enough wiggle room to enjoy foods that I love (hi, cheese!). I choose to eat this way because the evidence supporting a <a href=\"https:\/\/www.humnutrition.com\/blog\/plant-based-diet-for-beginners\/\">plant-based diet<\/a> for preventing <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/27479196\"><span class=\"s1\">chronic disease<\/span><\/a> and increased longevity is overwhelming.<\/p>\r\n<p class=\"p1\">Study after <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/24871675\"><span class=\"s1\">study<\/span><\/a> shows that plant-based eaters have a significantly reduced risk of cancer, type-2 diabetes, and heart disease. However, I know it can be hard to give up animal products completely. It\u2019s why you\u2019ll see that my diet includes a lot of plants, but with a few goodies mixed in.<\/p>\r\n<p class=\"p1\">I try to work out first thing each morning. Sometimes that looks like an hour-long conditioning class, and sometimes that\u2019s a few sun salutations or a walk around the block. Since my workouts are usually less than 60 minutes, I don\u2019t eat anything beforehand. However, I always try to drink at least 16 ounces of water during and after.<\/p>\r\n\r\n<h2>A Vegetarian Nutritionist&#8217;s Food Diary<\/h2>\r\n<img decoding=\"async\" class=\"aligncenter wp-image-8915\" src=\"https:\/\/res.cloudinary.com\/hum-nutrition-inc\/image\/upload\/q_100\/v1534196422\/matcha.jpg\" alt=\"Matcha Latte - Vegetarian Nutritionist - The Wellnest by HUM Nutrition\" width=\"600\" height=\"450\" \/>\r\n<h3 class=\"p1\">Breakfast<\/h3>\r\n<p class=\"p1\">As a new mom, my diet is all over the place. I rarely sit down for meals except for dinner. Also, I often find myself snacking in the car or with my infant in one hand. It\u2019s not ideal, but it\u2019s real.<\/p>\r\n<p class=\"p1\">Today I had a <a href=\"https:\/\/www.humnutrition.com\/blog\/matcha-latte\/\">matcha latte<\/a> with coconut milk (and coconut milk ice cubes\u2014so creamy!) and a peach. By the time I got home from the gym and fed my son, I had 15 minutes to quickly get dressed and leave the house. I drank my latte and ate my peach in the car on the way.<\/p>\r\n<img decoding=\"async\" class=\"aligncenter wp-image-8916\" src=\"https:\/\/res.cloudinary.com\/hum-nutrition-inc\/image\/upload\/q_100\/v1534196449\/pizza.jpg\" alt=\"Vegan Pizza - Vegetarian Nutritionist - The Wellnest by HUM Nutrition\" width=\"600\" height=\"450\" \/>\r\n<h3 class=\"p1\">Snack<\/h3>\r\n<p class=\"p1\">We had pizza and a salad for dinner last night, so I had a slice of this vegan pizza when I got home around 11 a.m. While I\u2019m okay with real pizza every now and then, I love this version with a chia crust, dairy-free cheese sauce, and lots of vegetables.<\/p>\r\n<img decoding=\"async\" class=\"aligncenter wp-image-8917\" src=\"https:\/\/res.cloudinary.com\/hum-nutrition-inc\/image\/upload\/q_100\/v1534196535\/tikkavegetables.jpg\" alt=\"Trader Joe's Tikka Vegetables - Vegetarian Nutritionist - The Wellnest by HUM Nutrition\" width=\"600\" height=\"450\" \/>\r\n<h3 class=\"p1\">Late Lunch<\/h3>\r\n<p class=\"p1\">My lunches are mixed. Sometimes I bring leftovers, sometimes I go out, and sometimes I pack <a href=\"https:\/\/www.humnutrition.com\/blog\/rd-meal-prep\/\">ready-to-eat meals<\/a>. Since this morning was hectic, I didn\u2019t have time to put together anything else. Thankfully, I stocked up on a few of these Indian packets from Trader Joe\u2019s (see also my <a href=\"https:\/\/www.humnutrition.com\/blog\/trader-joes\/\"><span class=\"s1\">Trader Joe\u2019s must-haves<\/span><\/a>). I love that they&#8217;re vegetarian and contain lots of vegetables, and they&#8217;re easy to heat at the office.<\/p>\r\n<img decoding=\"async\" class=\"aligncenter wp-image-8918\" src=\"https:\/\/res.cloudinary.com\/hum-nutrition-inc\/image\/upload\/q_100\/v1534196554\/tofusalad.jpg\" alt=\"Tofu Chicken Salad - Vegetarian Nutritionist - The Wellnest by HUM Nutrition\" width=\"600\" height=\"450\" \/>\r\n<h3 class=\"p1\">Dinner<\/h3>\r\n<p class=\"p1\">After heading home mid-afternoon for a few hours to play with my son, feed him dinner and give him a bath, I headed back to the office to finish some projects.<\/p>\r\n<p class=\"p1\">Therefore, my dinner was leftovers from my lunch the day before: a piece of toasted sourdough bread, my <a href=\"https:\/\/www.delishknowledge.com\/vegan-harvest-tofu-salad-sandwich\/\"><span class=\"s1\">tofu chicken salad<\/span><\/a>, and another peach. I usually like to eat at least one serving of greens for dinner, but wasn\u2019t able to get that in today. But that\u2019s okay! Even as a nutritionist, my diet isn&#8217;t perfect. I don\u2019t beat myself up for the food choices I make. Sometimes I crave a good veggie burger with crispy fries, and sometimes I eat a giant salad.
